A fun and unusual recipe we discovered in the Orange County Register back in 1968. At first, our family thought the combination sounded terrible, but we decided to give it a try — and we were hooked! It's been a quirky favorite ever since, and we still occasionally whip it up for lunch to bring back those memories.

Ingredients
7ounceSpam or luncheon meatcubed
2cupscanned kidney beansdrained
1/3cupBest Foods mayonnaise
2tbspchopped onion
1tbspprepared mustard
8frankfurter buns split
1cupcheddar cheeseshredded
butter to spread
Instructions
Preheat oven to 350°F.
In a large bowl, combine the kidney beans, cubed Spam, mayonnaise, onion, and mustard. Mix well.
Spread the insides of the split buns with butter and arrange them open-faced on a baking sheet.
Fill each bun with the kidney bean mixture.
Bake for 15 minutes.
Remove from the oven, sprinkle with shredded cheddar cheese, and return to the oven for another 5 minutes until the cheese melts.
Serve warm and enjoy this nostalgic, family-approved treat!
