- 1 lb Emmental cheese, grated
- 1 clove garlic, minced
- 1 ½ cups dry white wine (like Sauvignon Blanc or Pinot Grigio)
- 2 tablespoons Kirsch (cherry brandy) — optional, but adds a nice flavor
- 1 tablespoon cornstarch
- Pinch of freshly grated nutmeg
- Freshly ground black pepper
- Crusty bread, cut into bite-sized cubes
- Other dippers: Steamed vegetables (broccoli, cauliflower), apple slices, cooked potatoes, cornichons (small pickles)

Instructions:
1. Prepare the Cheese: Grate the Gruyère and Emmental cheeses. Pre-grated cheese often has a coating that prevents it from melting smoothly, so grating it yourself is best. Toss the grated cheese with the cornstarch. This helps prevent clumping.
2. Flavor the Wine: In the fondue pot, combine the white wine and minced garlic. Bring to a simmer over medium heat on the stovetop. (Don’t boil!)
3. Melt the Cheese: Reduce the heat to low. Gradually add the cheese mixture to the wine, a handful at a time, stirring constantly with a wooden spoon in a figure-eight motion. This helps the cheese melt smoothly and prevents it from clumping. Continue stirring until all the cheese is melted and the fondue is smooth and creamy.
4. Add Kirsch and Season: Stir in the Kirsch (if using) and season with a pinch of nutmeg and freshly ground black pepper.
5. Keep Warm: Transfer the fondue pot to the fondue burner and adjust the flame to keep the fondue warm and bubbling gently.
6. Serve and Enjoy: Provide each guest with a fondue fork. Spear a cube of bread (or another dipper) and dip it into the fondue, swirling it to coat. Enjoy! It’s traditional to not let your bread fall into the fondue – it’s considered bad luck!
